Tetsuya Wakuda, memleketi Japonya’yı terk edip Avustralya Sydney’e yerleştiğinde 22 yaşındaydı ve yanında sadece bavulu vardı. Mutfakta bizzat duruyor. 14 yılda sadece bir kez mutfaktan çıkıp masaya oturdu, onda da uyuyakaldı. Özelliği geleneksel Japon mutfağını, okyanus istiridyesi, okyanus alabalığı gibi sağlıklı Avustralya ürünleriyle ve Fransız tekniğiyle harcetmesi. Sürekli değişen bir fiks mönüsü var. En meşhur yemeği de pastörize edilmemiş havyarla sunulan okyanus alabalıkları. Sydney’in en zengin şarap kavlarından birine sahip. Fiyatlar 45-10 bin 500 dolar arasında. Tetsuya’s’ta bardakla şarap almak mümkün. Kişibaşı yemek ise 185 dolar civarında.

1961’de İspanya Katalonya’ya yerleşen bir Alman çift tarafından Barcelona’nın kuzeyinde kurulan Elbulli, Restaurant dergisi tarafından üst üste 3 yıldır birinci seçiliyor. Sadece nisan-eylül arasında senede altı ay açık. Sadece 50 sandalyesi var. Ama yemekleri için, başka hiçbir lokanta bu kadar uğraşmaz deniyor. En önemli özelliği yemekleriyle yarattığı şaşkınlık.
